Tofu Pumpkin Pie

Ingredients Needed:

  • 1 lb. LEASA Firm Tofu

  • 3 cups pumpkin, cooked

  • 3/4 tsp. sweetener

  • 1/2 tsp. powdered cloves

  • 1/2 tsp. ginger

  • 1 tsp.salt

  • 1 tsp. cinnamon

  • 1 tbsp. vanilla

  • 1 Pre-baked 9-inch pie shell

Directions:

  1. Preheat oven to 350 degrees F.

  2. Blend all ingredients in a food processor or with an electric mixer.

  3. Pour mixture into pie shell.

  4. Bake for 1 hour at 350 degrees F.
